Jin Jun Mei – Honey

Jin Jun Mei is a noble version of Lapsang Souchong, a traditional black tea (Hong Cha) from Wuyi. For Jin Jun Mei, unlike traditional Lapsang Souchong, only the tender leaf buds are used. The leaf buds give the tea a golden glow and an incredibly fruity and honey-like aroma. Due to the very early harvest and the use of the pure leaf buds, the ingredients are extremely concentrated and allow to make an extraordinary amount of infusions.
The almost inaccessible tea growing area makes industrial production virtually impossible and so this tea is still harvested by hand. The manufacturer also produces out of conviction purely organic. This is also promoted by the government since Wuyi Shan is a UNESCO World Heritage Site and it should remain like this. The Wuyi mountain range stretches at an altitude between 200 and up to 2058m and have a mild climate with an average temperature of 21°C.

    The dry leaf has a smell of cooked herbs or vegetables. Perhaps oregano and thyme. Wet leaf has an incredible baked zucchini aroma. Brewed 5g in a 90ml gaiwan at 95C for 10s+5s pour. First infusion is full of spices that play on different parts of the tongue. Not a hint of bitterness. Second infusion is deeper, with malty notes starting to come through, but the zucchini is still on the forefront. Third infusion now has a gentle bitter note, though I am highly sensitive to bitterness, so maybe other people won’t perceive it. The liquor is medium thick and smooth. Fourth infusion remained consistent. The flavor starts to weaken from the fifth infusion onward, so longer steeps are necessary. Compared to the other two jin jun meis available at the time on the site, this one is my favorite.
