Kabusecha ( かぶせ茶), sometimes also called Kabuse Sencha, is a shaded Japanese [[green tea]]. For kabusecha, the tea bushes are covered with nets called "kabuse" one week before harvesting, which filter about half of the incoming sunlight. Kabusecha is shaded for about a week, while [[Gyokuro]] for comparison, is shaded for up to three weeks. Shading causes the tea plants to produce more chlorophyll and [[catechins]] to be broken down, resulting in a milder taste and a strong green colour. | |||
